Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer in bucket was tested at over 200 ppm chlorine. Bleach water sanitizer prepared by operator at time of inspection in three-compartment sink was tested at less than 100 ppm chlorine.
Corrective Action(s): Bleach water sanitizer was re-made (two buckets with wiping cloths, and in one compartment of the three compartment sink) and tested at 100 to 200 ppm chlorine. Ensure sanitizer is always maintained at the correct concentration for sanitizing food contact surfaces, equipment, and utensils (e.g. 100 to 200 ppm chlorine).

Observation (CORRECTED DURING INSPECTION): Two cans with food (opened) observed in two-door glass cooler. It was stated that cans were recently opened.
Corrective Action(s): Contents transferred to food grade containers with lids. Once opened, ensure canned foods are transferred to appropriate food grade containers with lids as the interior surface of the can may potentially rust over time if exposed to oxygen.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Debris observed in storage areas (floors, shelves). Grease observed on cook line equipment, including ventilation canopy and floor.
2. What appeared to be a few dried rodent droppings was observed on one shelf in dry storage area. Food was properly sealed / covered, no evidence of contamination of food / equipment / utensils. No other droppings observed.
Corrective Action(s): Ensure above-noted areas are properly cleaned and sanitized. Food debris and/or grease may potentially attract pest activity. Date to be corrected by: November 2, 2022.
