Observation (CORRECTED DURING INSPECTION): Quats sanitizer was not at the correct concentration in bottle spray and at the dispenser. Bar manager called service technician to come in from Ecolab
Corrective Action(s): Use a chlorine solution sanitizer at 100-200ppm until dispenser is fixed and quats sanitizer is tested at 200ppm. Manager prepared 3 buckets of chlorine sanitizer solution at 200ppm to use at the time of inspection.

Observation (CORRECTED DURING INSPECTION): No hand soap was available at the back kitchen hand sink. Manger filled the soap dispenser at time of inspection
Corrective Action(s): Ensure hand sinks are always stocked with soap and paper towel and hot and cold running water at all times for employees to properly wash their hands

Observation: 1) Some shelving racks inside both walk in coolers are rusty and covered with debris (showed manager which ones)
2) Spills and food debris found in the walk in cooler at the back of the kitchen
3) Oil build up and food crumbles found under the grill in the front kitchen,and on the side of the grill floors and side surface

Corrective Action(s): 1) Repaint the shelving so the surfaces are smooth
2) Thoroughly clean and sanitize the floor inside of walk in cooler
3) Scrape the grease, and thoroughly clean and sanitize the floor under and beside the grill as well as the side surface of the grill

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Cooler drawers under grill are difficult to open and close tightly
Corrective Action(s): Fix the drawers so they are more smooth and can close tightly to help maintain temperatures

Observation: Illumination inside the walk in cooler at the back of the kitchen appeared to be very low. Unable to clearly see the stock/food items at the corners/floor

Low temp dishwasher in the kitchen had a chlorine sanitizer residual of >50ppm at plate level, and glasswasher at bar and a chlorine residual of >50ppm
Foods covered in the coolers and freezers, labeled, good stock rotation
General sanitation is good,need to improve the areas mentioned above. No signs of pest.
