Observation (CORRECTED DURING INSPECTION): Several pounds of ground meat was sitting in a bowl on the counter without tempterature control. 35 Celsius internal temperature. Discarded.

Observation (CORRECTED DURING INSPECTION): 1) Bean sprouts stored in a large container of water, temperature was 13 Celsius. Discarded.
2) Cooked wontons were sitting on the counter without temperature control; 21 degrees Celsius internal temperature. Discarded about 4 pounds of wontons.

Observation: No sanitizer was in use in the kitchen. ALWAYS have sanitizer in use when preparing food; especially raw meats. Bleach sanitizer was prepared at time of inspection.

Observation: two open tins of food (Mango pulp and Hoisin sauce) were sitting in the fridge. Never store any food in open tins. Always transfer to a food-grade container.

Observation: 1)Back door was propped open at the time of inspection. If you want to keep the door open, install a close-fitting screen door. In the meantime keep the back door closed. This was also noted on the last routine inspection. Correction order issued.
2) There is quite a bit of food debris and grime in hard-to-reach corners throughout the kitchen. This provides food for pests as well as making it difficult to see signs of pests. clean.

Observation: Kitchen is very dirty. Most shelves require cleaning. All hard-to-reach corners require cleaning.

Observation: Two chest freezers have been covered in vinyl flooring, which is not food grade, not smooth and washable (cracks) and which is not very durable as there are numerous chips. Remove vinyl flooring from freezer tops. Install a durable, washable and food-grade work surface like a proper work table.
