Observation: Commercial dishwasher is out of liquid dishwasher detergent and rinse aid chemicals. This is a repeat violation.
Correction: You must connect the dishwasher to commercial dishwasher detergent and rinse aid chemicals as per manufacturer's recommendations ( immediately)
Comments

Raw meats and poultry items are now stored in a separate cooler. A new upright cooler will be delivered to the restaurant
tomorrow, which will be strictly used for raw meats and chicken. Ensure that all vegetables and ready to eat items (cooked meat, sauces, soups)
are stored in a separate cooler or above raw meats.

The cook has completed his FOODSAFE 1 training on January 25, 2020.

The ceiling tiles and floor around the dishwasher has been cleaned.
General sanitation and organization of the premises appears better.

*The preparation cooler in the front serving area still between 5-6 degrees C. Repair or service this cooler so that it maintains 4 C or below.
Bleach sanitizer available at all stations. Ensure to use 1 oz bleach per gallon to make 100 ppm chlorine sanitizer solution.
