Gen - Inspection conducted in response to a fire at the food premises: - Fire occurred Sunday early morning (prior to opening) - Fire originated in the dumpsters near the back-door to the kitchen - Smoke/fumes appear to be limited to the rear section of the kitchen - Provided copy of the "Small Fires in Food Premises" checklist for operator to assess/remediate affected areas - Please ensure to: 1) Clean and sanitize all surfaces exposed to smoke/fumes 2) Discard all contaminated food, single-service items 3) Repair structural damage to the food premises - Restoration company is on-site to assess and remediate the food premises - Operator may resume operations once all items in this report have been addressed and other agencies requirements (ie.
