Corrective Action(s): Ensure all utensils are stored in a sanitary manner at all times. Stored knives in a tray or on a magnetic knife rack holder. Operator has re-washed the knife in the high temperature dishwasher. Violation Score: 5

Routine inspection: Permit posted in plain view of the public. FOODSAFE requirements met at time of inspection. As discussed in previous inspection monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse temperatures. Have records available for review at all times. Walk in cooler at or below 4 degrees C. Decommissioned walk in cooler used as dry storage space. Domestic cooler at or below 4 degrees C. Freezer section at -18 degrees C. All freezers at or below -18 degrees C. Preparation cooler drawer section at or below 4 degrees C. No foods stored in inserts. Smaller preparation cooler inserts and lower section at or below 4 degrees C. No hot holding at time of inspection. Bleach sanitizer available for use in labeled spray bottle. Dishwasher registers 79 degrees C at the plate surface during the final rinse cycle.
