Observation (CORRECTED DURING INSPECTION): At the time of inspection knife observed stored in spacing between the larger preparation cooler and hot holding unit.
Corrective Action(s): Ensure all utensils are stored in a sanitary manner at all times. Stored knives in a tray or on a magnetic knife rack holder. Operator has re-washed the knife in the high temperature dishwasher.
