Observation: Mechanical dishware washer has been removed from the kitchen. 3-compartment sink is observed to be small and not adequate to accommodate dishware. Also, proper procedure of sanitizing food trays and other dishware can not be completed properly.
Correction: Re-install the mechanical dishwasher. Ensure sanitizing step in the final rinse meet industry required standards. If the new install is different than the previous unit, call your health inspector to confirm.

For High-temp dishwasher units final rinse water temperature must reach 71C at the dish surface.
For Low-Temp dishwasher units sanitizing chemical in final rinse must reach adequate level according to the manufacturer's specification.

Observation: Dishwasher sanitizing hot water: 65.8C max temp after 4 runs.
Dishes are mainly trays to be washed at intervals or at end of day, no customer dishes.
Correction: Please call and have this fixed to ensure final rinse temperature at plate surface reaches 71C, minimum gauge temp. 82C. Use 3 comp sink method in the meantime.
