Observation (CORRECTED DURING INSPECTION): Observed candles underneath the chafing dishes to be all off. Food was sent out since 11:00hrs and buffet will end at 13:00hrs. Inspection conducted roughly at 12:30hrs.
Corrective Action(s): Ensure all hot potentially hazardous foods are under chafing dishes where candles are turned on. All hot potentially hazardous foods must be hot-held at 60C or higher.

Observation (CORRECTED DURING INSPECTION): Can opener blade and along the meatslicer blade and guard observed to have built-up of food debris.
Corrective Action(s): Clean and sanitize the aformentioned items. Can opener blade and meat slicer must be cleaned and sanitized after each use or after 2 hours of continous use whicher ever is lesser.

Observation: Exhaust hood vents observed to have built-up of food debris. Next service date to be on December 30, 2023. Staff informed cleaned every 2 weeks. Food debris and food (lemons) observed underneath the shelving racks in the walk-in cooler.
Corrective Action(s): Clean and sanitized the aformentioned areas. Increase cleaning frequency of exhaust hood vents to prevent grease build-up. Increase cleaning underneath hard to reach areas to prevent food debris. Email pictures to inspector for validation. Corrected by: January 3, 2024.

Routine Inspection conducted today.

Lactic acid sanitizer spray bottles at 272-700ppm/704-1875ppm DSBA/Lactic Acid. 2-compartment sink available for food preparation.
Undercounter cooler, stand-up coolers, walk-in coolers measured at 4C or lower. Walk-in freezer measured at -18C.
Food observed to be stored at least 6 inches off the floor. Meat slicer observed to be in sanitary condition.
Low-temperature dishwasher measured at 100ppm chlorine final rinse.
Ice machine observed to be in sanitary condition.

NOTE: Ensure all kitchen staff have valid FOODSAFE Level 1 able to present to inspector for validation. At the time of inspection noted only one server to present valid FOODSAFE Level 1 and no kitchen staff.

Overall, facility is well organized.
