Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 69C at the plate level. At least 71C is required for properly sanitizing utensils and equipment.
Corrective Action(s): Manually sanitize all utensils and equipment sanitized by the dishwasher today. Dishwasher can be used for wash and rinse, however sanitize must be performed manually. Set up the 3 compartment sink for manual dishwashing.

- 200 ppm quats sanitizer available in pails and from the dispenser.
- 3 compartment sink available for manual dishwashing. Sink plugs available.
- Vegetable cutter maintained in a sanitary condition.
- Food products stored off the ground and organized.
- Temperature records maintained and available for review.
- No pest activities observed at the time of inspection.
- General sanitation satisfactory.
