Corrective Action(s): Clean the droppings as discussed. Lay more traps.

Observation: Cold fridge temperature was around 9 degC. This cooler is only used for storing bread.
Corrective Action(s): Do not store PHF's in this cooler unless it has been fixed and can maintain a temperature of 4 degC or below.

Comments

General Comments:
All other coolers are below 4 degC; walk-in cooler's at 2 degC; walk-in freezer's at -18 degC
Foods were not in warmers at the time of the inspection. Warmers are prewarmed prior to foods being placed in them (closer to lunch time).
All hand sinks were fully equipped
200ppm Quats was available in spray bottles at all the stations
Temperature logs were being maintained
Dishwasher rinse temperature was 73 degC at plate level
Manager had FS level 1 or equivalent certification
Exhaust hoods appear clean and are free of grease build-up
