A routine inspection was completed:
- Coolers 4C or colder; freezer -18C; hot holding unit above 60C; thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher was 75.9C at the plate's surface, as per max/min thermometer.
- Glasswasher had [Cl2] of 50ppm.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; foods stored 6" off the floor on shelves, racks, or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Exhaust canopy was serviced in January 2023 and next service due in July 2023. Exhaust canopy is clean and filters washed weekly.
- All surfaces are smooth, durable, sealed, and cleanable.
- Coving along the base of the wall in the dishwashing section has been sealed.
- The flooring by the back handwashing sink is level, sealed and cleanable.
- The flooring in the dry storage area, in the side prep area (dough mixer present), is durable, smooth, sealed and cleanable.
- All items from the initial inspection has been completed.
- The back door has a metal screen door to exclude pests.
- Valid FoodSafe certified staff present.
