Observation (CORRECTED DURING INSPECTION): Large tray of cooked rice noted at room temperature. Surface temperature ranged from 33-35C. Per staff, rice was cooked over 3 hours ago. Rice is cooked in advance in the morning and is rotated into rice cooker (warmer) when rice runs low.
-Staff discarded rice at time of inspection.
-Hot potentially hazardous foods must be kept at or above 60C to minimize bacterial growth.

Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available at time of the inspection.
-Staff made sanitizer solution in bucket (at 100ppm chlorine) and a spray bottle (at 200ppm chlorine).

*Sanitizer solution must be available at all times in food preparation areas to wipe down food contact surfaces. Sanitizer solution should be at a concentration of 100-200ppm - this can be made using 1 tsp of bleach in 1 L of water.
*Ensure non-scented, regular bleach is used for food contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1) Two large containers of uncooked rice were uncovered in kitchen area. One large container of sugar was uncovered in downstairs storage area.
-Staff covered containers with lids at time of inspection.
*Ensure foods are kept covered to protect from potential contamination.

2) Small block of ham stored directly on wired shelving of cooler unit.
-Staff discarded food at time of inspection.
*Ensure stored foods are kept in food-grade containers to protect from contamination.

-FoodSafe certified staff on duty. *NOTE: Keep paper copies of certificates on-site.
-Health permit posted in a clear location.

*NOTE: Ensure food contact surfaces are cleaned and sanitized at least every 4 hours or more frequently to minimize bacterial growth.
