Observation: Significant number of fruit flies were noticed in the winery area.
Corrective Action(s): Ensure to wash all floors, tanks and other equipment with hot water to remove fruit flies and their eggs.
Ensure to wipe off any spills or standing water on the floor paying special attention to area around equipment and tank legs.
Hire a licensed pest control company for fruit fly control if the infestation is not under control.

* The back loading area bay door must be kept closed to prevent entry of rodents.
Wine and fermentation tanks are cleaned using Ecolab Turbocharge II alkali cleaner and sanitized using
Oxonia sanitizer. Ensure to follow manufacturer's instructions when using these chemicals.

Oxonia is also used in the spray bottles for sanitizing of cutting boards.
Upright cooler below 4 C.
Dishwasher reached 71 C at the glass surface during final rinse.
General sanitation requires improvement.
