- Commissary prepares grab 'n' go foods (ie. salads, sandwiches ...etc) with ingredients from other departments (ie. deli, produce..etc)
- Hand wash station fully equipped with soap, paper towel, hot and cold running water (Ensure paper towel in roll is located beside hand sink during food preparation or have a paper towel dispenser installed)
- All coolers 4C or less (prep cooler, undercounter cooler, cabinet drawer).
- Refrigerated room approx 16C (no raw meat processing done in this area)
- 200ppm quat available at at 3 compartment sink source and in spray bottles.
- Overall general sanitation good. No obvious signs of pest infestation.
