Observation (CORRECTED DURING INSPECTION): One bucket of cooked beef and one bucket of cooked pork was stored on the counter under ambient air temperature. Internal temperature measured at 13C. Operator stated meats were put out during dinner rush and will be used up very fast.
Corrective Action(s): Ensure cooked meats are stored in coolers or ice bath during rush hours. Potentially hazardous food such as meats should be stored at 4C or less at all times.

Observation (CORRECTED DURING INSPECTION): A chopping knife was stored in the gap between the wood chopping block and stainless steel prep table. Food debris observed on the knife.
Corrective Action(s): Clean and sanitize the chopping knife. Ensure knives are stored in clean food grade container or wall-mounted holders.

Observation: Pre-made noodles were stored in single-use containers that stacked on top of each other. The bottom of the container was in direct contact with the noodle.
Corrective Action(s): Ensure noodles are stored inside container with a physical cover. Bottom of the container may not be clean and must not in contact with food. Correct by: today.

Observation (CORRECTED DURING INSPECTION): Screen door at the back entrance was folded up and not being used. Back entrance door was open at the time.
Corrective Action(s): Screen door must be in use when back entrance door is open. This is to prevent entry of pest such as flies.

Observation: Accumulation of food debris observed under the stoves and deep fryers. The area around the fish tank was not organized.
Corrective Action(s): Clean the areas under stoves and deep fryers. Follow your sanitation plan for regular cleaning schedule. Organize the area around the fish tank. Correct by: June 14, 2022.

- Walk-in freezer measured at -19C.
- Hot food hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitize available in buckets for both front and back kitchen.
- High temperature dishwasher registered 71C at the plate level during final rinse cycle. 71C is the minimal temperature required.
- No pest activities observed at the time.
