- 100ppm chlorine sanitizer present
- Temperatures of refrigeration units were adequate (<4C for coolers and <-18C for freezers)
- Temperatures of hot holding foods were adequate (>60C)
- High temp dishwasher achieved adequate sanitizing temperature (78C at plate's surface)
