-General sanitation is satisfactory.
-Hot and cold running water available
-Liquid soap and paper towel present at handwashing station
-Bleach present for sanitizing knives and cutting boards. *Store all knives in clean knife holders or other clean location. One knife was noted stored in gap between sink and wall. This is not a suitable location as it is not clean. Knife was re-washed and sanitized at the time of the inspection.
-Walk-in cooler was at -1C
-Walk-in freezer was at -20C
-Discussed cleaning/monitoring of live holding tanks with Manager. Tanks are cleaned every two weeks. Temperatures are monitored on display. Water appeared clear.
-Tags for shellfish present
-Storage of products on ice was satisfactory with the exception of one container of shrimp in which more ice was needed (addressed at the time of the inspection). This has been a reoccurring issue. All staff must be trained and diligent with monitoring product temperature and ice level to ensure temperature are <4C
