302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer solution prepared and available for use. Corrective Action(s): Instructed staff to make a 100ppm bleach sanitizer solution for sanitizing food contact surfaces and food equipment. Bandsaw to be cleaned and sanitized every 4 hours or in between use between processing chicken, goat, etc. Violation Score: 5

209 - Food not protected from contamination [s. 12(a)] Observation: Marinated meats observed in bins/totes with no lids inside the walk in cooler. Corrective Action(s): Ensure all food products are covered to protect from contamination. Correct immediately. Violation Score: 3 210 - Food not thawed in an acceptable manner [s. 14(2)] Observation (CORRECTED DURING INSPECTION): Several frozen packaged lamb observed thawing in the break room. Corrective Action(s): Ensure all frozen potentially hazardous foods are thawed in the cooler or in the walk in cooler. Staff has relocated the thawing frozen lamb to the walk in cooler. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Lid to the chest freezer in back area damaged. Insulation material is exposed and sections held together using duct tape. This was discussed at the last inspection and this freezer was to be replaced by March 31, 2022. Replace the damaged freezer by September 20, 2022. Corrective Action(s): Violation Score: 3 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: Rusted sections of the walk in cooler walls have not been painted as discussed in the previous inspection. Corrective Action(s): Ensure all surfaces are smooth, non absorbant, and easy to clean. Re-paint the rusted wall sections inside the walk in cooler. Correct by September 20, 2022. Violation Score: 3
