All coolers are at 4 C or colder (line cooler, salad cooler, bar cooler, dessert cooler, and walk in).
Hand washing sinks have liquid soap and paper towels.
No hot holding during inspection.
Batter for fish is being kept in the fridge. If not, store on ice in small volumes.
Dishwasher has a chlorine final sanitizing rinse - good.
Quats sanitizer (200ppm) is used on counters, etc. Sanitize food contact surfaces and counters every 4 hours. Store wiping cloths in sanitizer.
Oyster warning is on the menu. Tags to be kept for 90 days for shellfish.
Food Safe trained staff on site. Reviewed requirements for on-line refresher course if certificates are more than 5 years old (obtained prior to July 2013).
Note: The fluorescent bulb in the back prep area should have a cover or a plastic tube cover to protect area if bulb were to break.
