Comments

- Coolers were <4C and freezers were <-18C
- Low temp dishwasher achieved 50ppm chlorine
- 100ppm chlorine sanitizer bottles present at multiple locations
* Ensure to soak wiping (cloth) rags in a sanitizer solution when not in use (after wiping work table rinse and soak in a sanitizer solution)
- Storage of foods was adequate
* Temp log sheet in place and up to date, add monitoring of dishwasher sanitizer level and sanitizer solution for wiping in a log sheet
- General sanitation was adequate
*two hand washing sinks will be installed one in the end another one near the cooking line and dishwashing line.
* As discussed, make sure food perp sinks are being used with rotation (veg first meat after and proper cleaning and sanitizing)- it is recommended to have an additional food prep sink for defrosting, cooling etc
