Observation (CORRECTED DURING INSPECTION): No sanitizer was observed in the front food prep area or kitchen. QUAT dispenser was measured at 200ppm.Sanitizer is required to be accessible to staff to ensure adequate sanitation of food contact surfaces
Corrective Action(s): Ensure that either a QUAT spray bottle or bucket (@200 ppm) with a rag is available to staff. Replace bucket solution at most every hour or as needed

Observation: Mouse droppings observed under the prep cooler shelves and inside the dry storage cabinets (below hand wash station). Evidence of chew marks on sugar and pepper packets

Corrective Action(s): Discard all broken sealed boxes of dry goods such as (but not limited to) sugar, salt, pepper, etc. Place dry goods, plates, cups and all other food items or utensils in pest proof containers with a lid. Clean droppings and sanitize all surfaces to ensure monitoring of pest activities.

Observation: Gap observed under the main entrance of the unit. A hole was observed at the far end of the sandwich prep counter directly below to hot holding unit. These conditions/openings allow for the entrance of pests.

Corrective Action(s): Place a door sweep under the door and seal the hole described.

Observation (CORRECTED DURING INSPECTION): First compartment (left) of 3 compartment sink did not have a functioning stopper and unable to hold water. All 3 sinks must hold water to allow for an adequate wash/rinse/sanitize step of dishes/utensils.
Corrective Action(s): *Rubber seal was secured during inspection.* Ensure staff are trained on resolving this issue in the future. Ensure the sinks can hold water
