Observation: - Hot water not available at handsink or 2-compartment sink to facilitate correct handwashing procedures and proper manual dishwashing and sanitizing procedures.
Correction: - Provide hot water at handsink and 2-compartment sink. Repair and/ or replace and/ or adjust hot water tank so that adequate hot water supply is available for handwashing and dishwashing purposes.

- Handsink is supplied with hot and cold water, liquid soap and papertowels.
- Operator stated that hot water tank was replaced on 27-June-2025, service invoice provided.
- 200 ppm chlorine bleach sanitizing solution available.

- Meat products HELD on 26-June-2025 have been released. Operator was notified via telephone on 27-June-2025.
- Itemized receipts from an approved source for lamb shank, lamb legs, lamb heads, lamb feet, and goat carcasses produced.
- Products are cut and re-packaged at an approved facility.

- CLOSURE ORDER RESCINDED.
