Observation: What appears to be mildew was observed on the interior surfaces of the ice machine (concentrated on left corner below ice production panel).
Corrective Action(s): Discard ice. Ensure interior surfaces of ice machine are properly cleaned to remove all mildew / biofilm, rinse, then sanitize. Mildew / biofilm may potentially contaminate ice. Date to be corrected by: Today.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One container of bleach water sanitizer located within the kitchen was measured at a concentration in excess of 200 ppm chlorine.
Corrective Action(s): Bleach water sanitizer was diluted at time of inspection and measured at 200 ppm chlorine. Ensure bleach water sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (i.e. 100 to 200 ppm chlorine). Concentrations in excess of 200 ppm chlorine may remain on surfaces at levels that may potentially contaminate food. Preparation of sanitizer was discussed with management and staff at time of inspection. A poster is available within the kitchen that outlines how to prepare sanitizer solutions.

Observation: 1. Food debris observed on walk in cooler floors and walls.
2. Debris observed on walk in freezer floor
3. Door seals of coolers have food debris and mildew build up (kitchen preparation cooler, front area under counter coolers)
4. Liquid and food debris observed within front area under counter coolers
Corrective Action(s): Ensure that the above-noted areas, along with any hard-to-reach areas are properly cleaned. Food debris may potentially attract pest activity and may contaminate food and/or food contact surfaces. Date to be corrected by: April 6, 2019.

Observation (CORRECTED DURING INSPECTION): Rubber mallet which is used to break apart ice within the ice machine was covered with plastic cling wrap which was deteriorating. This is a repeat violation.
Corrective Action(s): Plastic cling wrap removed. Deteriorating plastic wrap pieces may flake off and potentially contaminate ice. Rubber mallet is currently stored within a clean container along with the ice scoop--no concerns. Rubber mallet may be covered with plastic food wrap if wrap is changed as often as needed to protect ice from potential contamination. Otherwise, ensure that food grade mallet is stored in a clean area and cleaned and sanitized as needed.

- Hand washing stations (front, back) are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- High temperature dishwasher measured 72 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at the utensil surface)
- Wiping cloths stored in bleach water sanitizer at front at 100 ppm chlorine
- No signs of pest activity observed at time of inspection
- FOODSAFE requirements met
