Observation (CORRECTED DURING INSPECTION): Dishwasher is not achieving final sanitizing rinse of greater than or equal to 71 degrees Celsius at the plate.
Dishwasher was serviced yesterday however continues to malfunction today.
EHO ran dishwasher greater than 10 times and highest temperatures reached were from 50-65 degrees Celsius at the plate.
Manifold indicating 192 degrees F however this is not consistent with readings internally. Check thermometer on top of machine as this may be malfunctioning.

Corrective Action(s): Use dishwasher for washing purposes only and have three compartment sinks set up with sanitizer solution for dishes.
Use disposable utensils and dishes as much as possible. Adequate supply of single use disposable utensils and dishes on site according to Manager.

Observation: Dishwasher malfunctioning. Final sanitizing rinse not achieving 71 degrees Celsius at the plate.
Dishwasher was repaired yesterday however today the machine is not achieving final sanitizing rinse of 71 degrees Celsius at the plate even though the machine is indicating 190 degrees F at the manifold
. .
Corrective Action(s): Ensure dishwasher is repaired as soon as possible as staff will have to manually sanitize dishes until such time as dishwasher can be repaired. This is extra work for staff that is not possible long term.
