Note: Ensure that the lids are closed as much as possible for the prep coolers
- All freezer units registered a temperature at or below -18 deg C
- All hot holding units registered a temperature at or above 60 deg C
- All handwashing stations equipped with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher available for mechanical warewashing, sanitizing temperature registered at 73 deg C on plate surface during final rinse cycle
- Two compartment sink available
- Food contact surface sanitizer registered at 200 ppm QUATs
- Overall sanitation is satisfactory
- No signs of obvious pest activity
