Observation (CORRECTED DURING INSPECTION): Noted 5 pieces of cut watermelon at room temperature - discarded at time of inspection.

Observation: Noted new chest freezer obtained but was covered with carboard. Also, noted news paper put in between band saw for meats.
Corrective Action(s): Remove cardboard and news paper. All surfaces are to be smooth and washable. Repair/replace equipment as needed and do not use absorbent material.

Observation: Noted paper towel holder at hand sink in meat processing area broken. Paper towel rolls stored behind hand sink.

Comments

- Premises is a food store that does some meat cutting/grinding.
- All coolers (retail, walk in...etc) 4C or less
- Bean sprouts, saran wrap packaged mushrooms, individually packaged salted cod fish stored in retail cooler units at less than 4C
- Freezers -18C or less.
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- Hand wash stations had soap, paper towel, hot and cold running water.
- Bleach available on site. 100ppm sanitizer available in spray bottles and buckets. Reminded staff to keep all wiping cloths stored in sanitizer solution when not in use.
- Two sets of drain plugs available for each two compartment sink.
- Meat processing equipment appeared clean at time of inspection. Operator confirmed that they are taken apart and cleaned/sanitized after each use.
- Premises processing/repackaging area has been granted health approval to operate by previous inspector.
- Self closing door on washroom opening into processing area and light covers in place over processing area still in place.
- All boxes and bags of foods stored off the ground on pallats.
- Store manager confirmed that he had received hats off day compliance letter. Ensure temporary food permit application is submitted within 1 month of hats off day should you wish to provide food intended for immediate consumption (ie. provide food service) during special events.
