301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Small amount of dried on food debris observed on deli slicer food contact surfaces.
Corrective Action(s): Deli slicer was disassembled, cleaned, and sanitized at the time of inspection. Ensure deli slicer is properly disassembled and thoroughly washed, rinsed, and sanitized after every use in order to prevent potential contamination of food.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two spray bottles labeled as sanitizer were tested at less than 50 ppm quats and 100 ppm quats, respectively.
Corrective Action(s): Sanitizer bottle contents were discarded and bottles were refilled at dispenser. Sanitizer was tested at approximately 200 to 400 ppm quats. Ensure sanitizer is always is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats) and change solution as often as necessary to maintain these concentrations. Verify with test strips.

Observation: 1. Seal around cook line drain grate is missing/broken in multiple areas, exposing concrete below. Ants observed in areas with exposed concrete (potential insect entry point).
2. Both the screen door and garage door located near the entrance to the kitchen were observed to be open.
Corrective Action(s): 1. Ensure areas noted above are properly sealed to (1) limit the entry of pests into the facility, and (2) facilitate proper cleaning. Food debris may become trapped in these areas. Date to be corrected by: March 16, 2020.
2. Screen door and garage door closed at time of inspection. Ensure screen door remains closed at all times when not actively in use in order to limit potential entry of pests into the facility.

Probe thermometers available on site. Discussed calibration methods and frequency with person in charge.
Raw and ready-to-eat food items properly organized.
Cooling racks and cooling wands on site.
Canned products observed to be in good condition (random selection checked).
Ice cream scoop dipper well in use.
Hand washing sinks unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Quaternary ammonium compounds (quats) sanitizer available at 200 ppm in buckets with wiping cloths.
High temperature dishwasher measured 74 degrees C at the utensil surface (minimum requirement: 71 degrees C at the utensil surface during the final rinse).
Three compartment sink supplied with hot and cold running water and equipped with built in drain plugs.
Hair nets, hats, and non-latex gloves available and in use.
Chemical spray bottles labeled.
Temperature logs maintained.
Note: Fly population appears to be significantly decreased since previous routine health inspection. Few flies observed only in mop sink area. It was stated that pest control operator is on site on a routine basis.
