Note: The kitchen was not being used at the time of the inspection.

- General sanitation is satisfactory.
- Main handwashing station in the kitchen supplied with hot/cold running water, soap, and paper towels.
- High temperature dishwasher reached 74.4C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration. Must label all sanitizer spray bottles.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning. Better organization and cleaning is required.
- No signs of pest activity.

Temperature Control:
- All coolers in the main kitchen and dry storage area maintained at < or = 4C.
- All freezers in the main kitchen and dry storage area maintained at < or = -18C.
- Cleaning is required on the sliding doors of the upright coolers and on shelving racks.
- Ensure to keep up to date on temperature logs.
- Hot steam tables for food dispensing must maintain > or = 60C.
