Observation (CORRECTED DURING INSPECTION): Food in pizza cooler in the above inserts and cooler below at 7-10C (dehli, minced chicken, chopped tomatoes, caramelized onions). Air temperature of cooler below at 6C (minimum temperature during the full period of inspection time). Staff adjusted temperature but temperature remained the same. Staff indicated food was there since morning. All potentially hazardus food items were discarded.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Glasses were stored with the business ends touching the rubber perforated liner. Staff indicated that they have not been cleaned.
The lids to the sandwich prep cooler was uncleaned.
Corrective Action(s): Clean and sanitize the liner on a regular basis. If they can not be properly cleaned and sanitized, remove the liner.
Clean and disinfect the sandwich prep cooler lid.

Observation: The dough mixer had dough dried and caked up residues and appeared uncleaned. Staff mentioned that it is cleaned once a day.
Corrective Action(s): Clean and sanitize the dough mixer. Advised staff to clean equipment at least every 4 hours.

Observation (CORRECTED DURING INSPECTION): -Ice found in a bar sink that had pop gun residues draining into it.
-A bowl of coleslaw was used to cover a container of raw cabbage (ready-to-eat). Operator removed and discarded ice and indicated that it will not be used for ice storage.

Observation: Rodent dropping observed on the shelf in the back storage room. Food items and other items stored on the floor.
Corrective Action(s): Remove droppings and clean and disinfect all the shelving units. Store all items food and togo packages in pest proof containers at at least 6" above the floor.

Observation: Back door had air gap and was also open.
Corrective Action(s): Repair the door to remove the air gap and ensure door is closed at all times.

Observation: The exhaust canopy had grease build-up.
The following areas require cleaning and degreased:
-the stove, the grill areas, the sides of the grill area, the shelves opposite to the grill and cooking units, the side of the deep fryer, dry goods containers.
-Refrigeration and freezer units (air ventilation guard, doors, gaskets, handles, bottom inside, ceiling) appeared uncleaned.
Corrective Action(s): Clean and disinfect the areas mentioned above.
