Observation: Rodent droppings observed in facility. Evidence of rodent infestation. Pest Control company has been employed and services the facility once per month.

Corrective Action(s): Inspect facility for points of entry for pests. Seal any holes.
Follow recommendations advised by Pest Control Company Technician.

Observation: 1) Rodent droppings observed in the following places:
- Lower shelves
- Floor in corners, hard to reach areas
- Floor under the dishwasher

2) Old rice found in bottom area of automatic sushi roller

Corrective Action(s): 1) Remove all dishes and equipment from lower shelves until rodent infestation is eliminated.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.

2) Ensure staff take entire sushi roller apart to clean and sanitize and not just the areas of food contact surfaces at the end of the night. The facility has an active rodent infestation therefore cleaning is a priority; any leftover food will encourage rodent activity to continue.
