Observation: Food/debris noted inside pops/pans, storage bins, etc. Cleaned and disinfected implements are being recontaminated in storage areas.
Corrective Action(s): All items are to be stored in a sanitary manner, in order to prevent post contamination. (ie: Upper shelving/upside down)

Observation: Food Storage: Food items are not being properly protected. Saran wrap being utilized. Containers are being stored ontop of unprotected food items.

Observation: Food premises cluttered and unorganized.
Corrective Action(s): Clean/orgnaize kitchen. Store all items in designated areas. (ie: office manuals/papers, etc) Remove all unused items to free up space.

Comments

- Temperature Control: No concerns noted. Monitoring is required. Internal monitoring of cooked food items is to be conducted and recorded. Temperature logs are to be kept on site for review.
- Mechanical Dishwasher: High Temp: Ok.
- Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner. Storage: refer to Violation Notes.
- Wiping cloth storage: Ok. Limit the quantity of cloths being used. Cloths are to be kept completely submerged in a sanitizer at all times. Monitor solution. Store unused cloths in designated areas.
- Food Storage: Refer to Violation Notes.
- Sanitary Facilities: Single use towels are to be kept stored in dispensers at all times. Unused supplies are to be removed from prep areas.
- Chemical storage: To be stored in designated areas.
- Staff hygiene: Discussed
- Sanitation: Refer to Violation notes. Recommend increased shelving storage. Remove all unused items.
- Pest Control: Pest control monitoring is currently being conducted within the school.
- Structurally: No concerns noted.
- Meat slicer cleaning and disinfection discussed. All staff are required to be properly trained.

- Garbage, Composting, Recycling and Oil Disposal: All items are to be kept stored in covered, rodent proof containers. Area(enclosure) is to be kept clean and organized.
