Observation: Dishware and cutlery not properly sanitized due to dishwasher not producing chlorine residual.
Correction: Instructed chef to prepare a sanitizer compartment. Chef prepared a bleach sanitizer dip. Concentration measured to be at 200ppm.

Followup to routine inspection
- Ice machine has been cleaned and in sanitary condition
- Block of ice has been removed from the standing freezer
- Food debris has been removed from under the grill and prep cooler. Premises in sanitary condition
- Staff indicated that technician has come in to replace the crack in the dishwasher line. Low temperature dishwasher now working. Free chlorine residual now measured to be at 100pm.

Note:
- Please maintain a dishwasher concentration log and document twice per day.
