Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher dispensing <50ppm chlorine due to lack of sanitizer solution left in container. New sanitizer connected and tube primed. >50ppm chlorine level was achieved at the plate level after final rinse.
Corrective Action(s): Ensure to check sanitizer level on a regular basis. Always prime the tube after replacing solutions. All dishware washed this morning to be rewashed at this time.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement
-200ppm QUAT available in labelled spray bottles.
-Chickens cooked this morning properly cooled, portioned, wrapped, marked with today's date and stored in walk-in cooler at this time.
-Equipment and tools in sanitary condition at this time.
-Ventilation canopy hood maintained. Next service in Nov 2017.
-No evidence of pest activity observed at this time.
-Washrooms satisfactory.
-General maintenance and sanitation of the facility very good.

NOTE: Ensure to replace containers for cooking utensils to materials that are dishwasher safe.
