Observation (CORRECTED DURING INSPECTION): Dairy product (yogurt) stored in drive-thru smoothie cooler at 8 degrees C. Smoothie cooler was noted at less than 4 degrees C this morning.
Corrective Action(s): Manager discarded smoothie product at time of inspection. Do not store potentially hazardous foods in this cooler until it can maintain temperatures of 4 degrees C or less. Cooler was being serviced during inspection.

Observation: 1. One bucket of chlorine sanitizer measured at less than 50 ppm. *Note: Sanitizer within change times.
2. Mildew/mould observed on interior of ice machine (panel below condenser)
Corrective Action(s): 1. Sanitizer was changed at time of inspection and measured at 200 ppm chlorine. Please ensure that sanitizer is changed according to schedule or as needed when visibly soiled. Test strips available.
2. Please ensure that ice is discarded, and internal components are properly cleaned and sanitized. Date to be corrected by: Today.

Observation: 1. Accumulation of grease observed under flat grill and chicken deep frier.
2. Debris observed on floor of dry storage area.
Corrective Action(s): Please ensure the above-noted areas are properly cleaned. Food debris may attract pest activity. Date to be corrected by: July 15, 2017.

Routine inspection conducted:

- Walk in cooler at 2 degrees C. Food is stored off the floor.
- Reach in cooler at less than 4 degrees C
- Remaining coolers at 4 degrees C or less (exception: smoothie cooler)
- Walk in freezer at -17 degrees C
- Fry and meat freezers at -10 to -11 degrees C
- Hot holding internal temperatures at 60 degrees C or more. Timer system in place.
- All prep table items and cheese curds within times indicated on time stamps
- Low temperature dishwasher measured 50 to 100 ppm chlorine in rinse residual at utensil surface (minimum 50 ppm)
- Three compartment sink set up with 200 ppm quats sanitizer
- Wiping cloths stored in chlorine sanitizer at 100 ppm chlorine. One bucket was changed at time of inspection.
- Vegetable slicer stored in sanitary condition.
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- FOODSAFE requirements met at time of inspection
- Temperature records available and up-to-date
- No evidence of pest activity noted. Premises is serviced by professional pest control company on a monthly basis. Last report dated June 19, 2017 indicated no pest activity.

*Note: Lobby and front counter areas were renovated and lobby is scheduled to open on July 15, 2017. Reminder to ensure that once turned on, front counter equipment is functioning properly and all surfaces are properly cleaned and sanitized prior to opening lobby.
