Observation (CORRECTED DURING INSPECTION): Less than 50 ppm chlolrine detected at plate surface level after final rinse cycle of dishwasher
Corrective Action(s): Operator switched sanitizer supply to a new bottle at time of inspection; greater than 50 ppm chlorine detected after final rinse. *Ensure to check level of sanitizer with test strips daily.

Observation (CORRECTED DURING INSPECTION): Back door and side door were left propped open at time of inspection.
Corrective Action(s): Ensure to keep all doors closed to prevent entry of pests. Install screen doors if you wish to leave doors open.

Observation: 1) Interior of prep coolers require cleaning - old food spills and build-up of food debris is present.
2) Floor of walk-in cooler requires cleaning - attention to floor/wall junction of walk-in cooler is needed.
Corrective Action(s): Clean and sanitize the areas noted above, and do so on a regular basis to prevent accumulation of food debirs/grease/dirt.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at over 200 ppm in spray bottle. **Ensure to mix 1 tsp bleach with 1 litre water for proper concentrations.
- All coolers in use were at or below 4C
- Walk-in freezer was at -22C
- Steam tables for hot holding were not in use at time of inspection
- Ice machine maintained in sanitary condition
- No signs of pest activity noted at time of inspection
*General sanitation has improved since previous inspections, however further improvement is needed.
