Observation: Low temperature dishwasher had no detectable chlorine in rinse residual at the utensil surface. Note: Chlorine does not appear to be moving through feed line.
Corrective Action(s): Ensure dishwasher is serviced so that it is in good working order and capable of providing a minimum rinse residual of 50 ppm chlorine at the utensil surface in order to properly sanitize equipment and utensils. Date to be corrected by: June 8, 2022.

Note: Commercial kitchen not in operation at time of inspection. Operator stated kitchen is not currently in use. A 100 ppm chlorine solution was prepared at the two-compartment sink. Ensure all utensils and equipment are properly sanitized in 100 ppm chlorine solution. Manual ware washing poster provided.

Hot and cold running water, liquid hand soap, and paper towels in place for hand washing.
Two-compartment sink supplied with hot and cold running water.
Bleach water sanitizer available in labeled spray bottle at 200 ppm chlorine.
Premises generally maintained in clean condition. No signs of pest activity observed at time of inspection.
