Corrective Action(s): Cold potentially hazardous foods must be maintained at or below 4C to prevent the growth of pathogens and or the formation of toxins. Cold potentially hazardous foods were moved to a cooler at 4C at the time of inspection.

Comments

-Prep cooler was at 4C (top and bottom).
-Upright cooler (by cookline) was at 4C
-Under counter freezer was at -10C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Glass washer had a final rinse of 12.5ppm iodine on the glass surface (minimum 12.5ppm required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Facility has switched to a lactic acid based sanitizer. Facility does not have test strips. Facility must obtain test strips to verify the sanitizer concentration.
-General food storage practices good at the time of inspection. Foods covered and stored off the ground. Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until March 09, 2023.
