Follow up inspection conducted:
-Cooler #2 (upright cooler with metal doors): no foods stored inside at time of inspection, but internal cooler temperature was measured to be at 3.8 deg C, and thermometer was present inside. As discussed previously, ensure that this cooler is not filled with too much food as it is a domestic cooler and not a commercial one.
-Cleaning has greatly improved in the areas between the cooking units, as well is in the undercounter storage space across the cooking line. Ensure to continually clean these areas so that debris does not accumulate
-sticky fly trap has been removed
-At time of follow up inspection, there was no food on counter across cooking line except for a small portion of BBQ pork that had been placed there within the past hour. As discussed, whatever is not used within 2 hours must be discarded. Long term solution would be to repair or replace the line/prep cooler to reduce the risk of food borne illness causing bacterial growth on food.
