Observation: -Cardboard is used as dividers and shelf liners in both fridge units at the meat cutting area

-Plastic wrap covering knife magnetic strip

-Black multi-level shelves too close to the ground in Walk-in cooler

-Raw wooden shelves have been added in Walk-in cooler


Corrective Action(s): -Remove all cardboard shelf liners from fridges and shelves -not a cleanable material, will get moldy and impedes cool air flow in coolers
-Remove plastic wrap for magentic strip -you must be cleaning these materials DAILY
-Increase the height of the lowest shelves by minimum 15cm to ease cleaning underneath
-Paint the raw wooden shelves with an oil-based paint to seal the wood from moisture

-Keep disposable containers face-down
NOTE: Many goods in the back warehousing area stored directly on the floor -this is not ideal -additional shelves are needed to maintain goods off the ground to ease cleaning underneath and monitoring of pests

Professional pest control comes on a regular basis: Orkin Pest Control comes in monthly

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
