Observation (CORRECTED DURING INSPECTION):
Both cookline cooler drawers and inserts had food stored at 8C. All perishable foods shall be stored at 4C/40F or colder at all times to prevent germs from growing.
Corrective Action(s):
Decrease the cooler temperature so food is 4C/40F and place foods in stainless steel inserts to allow cold air to conduct easier thru metal than plastic.
During the inspection, the head chef adjusted the cooler temperature. At the end of the inspection, the temperature of the food was 4C.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
The back receiving door has a gap between the base of the door and the door frame, which will allow the entrance of pests.
Corrective Action(s):
Immediately install a door guard or door sweep on the base of the door to exclude pests. This can be purchase at a hardware store, cut to proper length, and screwed on the base of the door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION):
General sanitation level is satisfactory, but the following areas have accumulated food and water:
- Undersides of sinks and tables
- Undersides and around garbage openings in countertops
- Legs and wheels of tables, cooking equipment, and shelving units
- The floor in the walk-in-cooler storing alcohol
- The floor under the cookline equipment
Corrective Action(s):
Wash and clean the mentioned areas to remove the food, grease, and water on a routine basis. This will help eliminate flies.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) Found food containers, lids and microwave to be cracked and damaged. Damaged equipment can not be properly cleaned and may pose a safety hazard to staff when used (radiation leak).
2) The pipe under the dishwashing rinsing sink is leaking. There is accumulated food and water on the pipe which is attracting and breeding flies.
Corrective Action(s):
1) Discard and replace all damaged equipment, containers and lids immediately.
2) Repair or replace the leaking pipe and clean up the accumulated food and water on the pipe and on the cupboard below.

Comments

A routine inspection was conducted, the following observations were made:
- Walk in coolers were 4C or colder; freezers were -16C or colder; hot holding units were above 60C; thermometers present; and temp. recorded daily.
- Low temp. dishwasher had [Cl2] of 50-100ppm; and glasswasher had [Cl2] of 50ppm.
- Quats sanitizer in spray bottles was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices done correctly. Foods stored in food grade containers; covered; labeled; date coded; in groups with raw animals proteins on lowest shelves below RTE foods; and 6" off the floor on shelves.
- Food handling practices done correctly. Utensils used to handle food; and disposable gloves discarded between tasks.
- Stock rotation done, FIFO followed, and no expired food in use.
- General sanitation level is satisfactory, but improvement needed in mentioned areas.
- Drain/fruit flies noticed, but Ecolab contracted to deal with issue.
- FoodSafe certified staff present.
