Observation (CORRECTED DURING INSPECTION): Sauce was stored in an old metal canister (visible rust on the outside). Staff stated the sauce was a sample intended for staff to sample.
Corrective Action(s): Foods should only be stored in food grade materials. Discontinue the use old metal canisters to store foods. Canister of food was discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Both display coolers were at 4C.
-Upright freezers (2) were both less than -18C.
-Chest freezer was at -17C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach was tested at 200ppm.
-Both sanitizer pails were labelled and tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat saw and cutting table sanitized approximately every 30 minutes or after each use. Saw thoroughly cleaned and sanitized nightly.
-Meat grinder attachment stored in the walk-in cooler between uses. Attachment cleaned and sanitized at the end of the night.
-General food storage practices good at the time of inspection. Foods stored covered and off the ground.
-General sanitation good at the time of inspection.
-No signs of pests observed at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until May 23 2026.
