302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwasher observed initially dispensing 0ppm in final rinse. Once new bottle of chlorine was installed and unit primed a final concentration of approx. 75 ppm chlorine was detected in the final rinse.
Wiping cloths submerged in quat sanitizer containers all tested at well below 200ppm in all containers. Quat was replaced at time of inspection .
Corrective Action(s): Manager stated they were changing quat sanitizer every 4 hours. Quat sanitizer in wiping cloth containers is to be changed every 2 hours of less depending n the organic load imparted into the sanitizer. Ensure all staff are aware Quat sanitizer is to be changed a minimum of every 2 hours.

Observation: Opening observed at base of back door where to the 2 doors meet large enough to allow the entry of pests

Observation: Quat being dispensed far too hot at the 3 compartment sink.
Rubber stopper missing at one of the sinks
Corrective Action(s): Lower the temperature at which the quat is being dispensed (ie 75F). so that the concentration can accurately be tested.
Replace rubber stopper.

***If the premises does not wish to use the dishwasher and solely use the 3 compartment sink for warewashing, the dishwasher will need to be removed from the premises. While the dishwasher is on the premises it must be maintained in good working order.
Gravy being hot held at 70c. Gravy is now made from powder mixed with hot water
**Exhaust canopy is overdue for cleaning as decal in exhaust canopy states next cleaning in 2022/06/16.
