Observation:
At time on the inspection, staff member possessed an expired FoodSafe certificate. There must be at least one person working, at all times, that possesses a valid FoodSafe certificate. The staff member was aware of the refresher course and that it has to be taken before Dec. 31/18, or the full course will need to be completed.
Corrective Action(s):
Immediately enroll staff, with expired FoodSafe certificates, into the refresher course (go to www.foodsafe.ca), and have a staff member working at all times with a valid certificate.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -15C; thermometers present; and temperatures checked daily.
- High temperature dishwasher rinse cycle was 72.9C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests present.
- All foods stored in food grade containers; covered; date coded; stored in groups; and 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- All surfaces are in good working order.
- Bleach present for sanitizing (1 tsp. of bleach to 500mL of hot water), there was no sanitizing solution present at time of inspection. Be advised, The use of Lysol disinfecting spray is NOT an accepted sanitizer in a food premises as it does NOT contain the correct strength of sanitizing chemical.
