Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezer temperatures satisfactory
- Accurate thermometers available for cold holding units
- Quats sanitizer available from dispenser and in sanitizing buckets at 200 ppm. Test strips on site.
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Discussed cleaning and sanitizing frequency of equipment. Department head stated equipment that is used continuously is washed and sanitized at least every four hours.
- Daily temperature records available

Note: Temperature of meat processing room at 13 degrees C at time of inspection. Please monitor and ensure that temperature is maintained at 10 degrees C or less.
