Observation (CORRECTED DURING INSPECTION): Sanitizing sink was not filled with sanitizer at time of inspection; kitchen was operating. As agreed upon during a previous inspection, this sanitizing sink must ALWAYS be filled with sanitizer during all hours of operation for sanitizing dishes.
Corrective Action(s): Future non-compliance will result in further enforcement action and the requirement to install a commercial dishwasher. Staff filled sink with bleach solution at time of inspection; 200 ppm chlorine detected.

Observation (CORRECTED DURING INSPECTION): One hand sink was missing paper towels.
Corrective Action(s): Staff refilled paper towel dispenser at time of inspection. Ensure all hand washing sinks are always supplied with liquid soap and paper towels.

Observation: Food left uncovered in walk-in cooler and walk-in freezer. Sweets left on lowest shelves of prep tables not properly covered. Bags of potatoes and onions stored in unprotected areas.
Corrective Action(s): Ensure all food is properly covered. Store all food in designated food storage areas off the floor and away from walls. Potatoes and onions discarded.

- Inside dry storage cooler (not plugged in) storing bins of dry ingredients
- In corners of walk-in cooler

- Along walls/perimeters of premises
Corrective Action(s): Clean all areas affected with rodent droppings and sanitize using a strong bleach solution.
