Observation: Main line cooler across from the grill registered 7 C ( bottom) and 7-8 C ( top inserts).
Corrective Action(s): Move all of the salsa and persihable ingredients to another cooler. Repair or adjust so that this cooler is able to maintain foods at 4 degrees or below at all times. Keep the lids closed when the cooler is not to use ( immediately).

* Test strips are required to monitor/test concentration of Ecolab's SmartPower sink and surface cleaner ( Immediately).
Ensure to test the sanitizer strength once a day.
* Provide paper towels at the hand sink located in the dishwashing area.
* Ensure to monitor and record temps for all fridges and hot held foods every day.

Main dishwasher registered 50 ppm chlorine at the plate surface. Good.
Bar dishwasher reached 71 C at the glass surface during final rinse.
