203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation: Foods are not being cooled properly. The cook prepared meat stew an hour ago and has separated them into pails with lids on. He has left them to cool at room temperature. Temperature of the stew was 60 degC. This is too hot and means that the stew is not being cooled down fast enough.
Corrective Action(s): When cooling stew, remove the lids and stir frequently. It has to cool from 60 to 20 degC in 2 hours and from 20 to 4 degC within 4 hours. The cook will place the stew in the walk-in freezer in the next hour to cool it down even faster.

Observation: There is no hot water at the taps.
Corrective Action(s): Repairman from next door was called. He said the power to the heater was turned off, so he turned it back on. He said there should be hot water within 2 hours and that he'd come back to check and make sure.

Comments

-Dishwasher rinse temperature is 73 degC at plate level.
-Coolers are below 4 degC
-Freezers are below -18 degC
-Staff have indicated that the hot water does sometimes run out. Discussed the issue with the operator and told him that he needs to get a larger hot water tank. It doesn't matter how busy the business gets, running out of hot water is not acceptable. The tank must be sized accordingly. The size of the current tank is 284L (75 ga). Operator will be replacing the hot water tank but needs some time. Get the tank replaced till Friday, March 9th.
-Foodsafe certificates issued before 2013 will expire on July 29th, 2018. Re-take the course as required.

FOLLOW-UP TO BE CONDUCTED TOMORROW. IF YOU STILL HAVE NO HOT WATER, YOU WILL BE ISSUED A CLOSURE ORDER.
