304 - Premises not free of pests [s. 26(a)] Observation: One live cockroach was found on a sticky trap near the entrance to the cafe. It was located below the clear plastic cups. Dead cockroaches were seen below the small oven and underneath the cash register. Photos taken. Corrective Action(s): A pest control company must come on site immediately and treat the establishment for cockroaches. Provide proof that a pest control company has been on site. Violation Score: 15 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)] Observation: There was no thermometer in the display case cooler (containing sandwiches, wraps etc.) Corrective Action(s): Provide a thermometer in this cooler within one week. Comments

-Provide an updated Food Safety Plan for sandwiches (melts), wraps and pizza pretzels within 2 weeks. These items were not part of the original menu. All coolers were < 4 C. Hand sink supplied with hot and cold water, soap and paper towels. Bleach solution was at 100 ppm. Staff on site had FoodSafe. Follow up inspection required.
