Observation (CORRECTED DURING INSPECTION): Quats sanitizer was greater than 400ppm.
Corrective Action(s): Quats sanitizing solution must be maintained between 200ppm to 400ppm. Concentrations in excess of 400ppm may be toxic. Sanitizer was remixed at the time of inspection.

Observation: 1) Upright freezer was not working at the time of inspection. Operator has already disconnected the freezer and contacted a service technician. All potentially hazardous foods were already relocated to the walk-in cooler.
2) Walk-in cooler light fixture is missing a shatter shield.
Corrective Action(s): 1) Have freezer unit serviced and ensure it can maintain -18C before using the freezer unit to store foods.
2) Replace shatter shield. All light fixtures require a shatter guard to protect foods from potential broken glass contamination.

Observation: Operator FoodSafe Level 1 issued prior to July 29, 2013 and is no longer valid as of July 29, 2018.
Corrective Action(s): Operator must successfully complete a FoodSafe Level 1 course to meet the FoodSafe requirement. While in operator, at least one person in the facility must have FoodSafe Level 1 or equivalent.

Comments

-Walk-in cooler was a 3C.
-Pizza prep cooler was a 4C (top and bottom) for both units.
-Front sauce cooler was at 4C.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out in 3 compartment sink. Sink plugs present.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-Canned foods in good condition,.
-General sanitation satisfactory at the time of inspection. Ensure spilled food in he prep cooler is cleaned on a routine basis.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
