Observation:
1) Accumulation of stains on the white floor. This will attract pests.

2) Food debris accumulated on the wall below the cooking pot station and on the metal frame the cooking pot sits on. This will attract and harbor pests.
Corrective Action(s):
1) A deep cleaning of the floor needs to be completed. Increase the frequency the floor is deep cleaned.

2) Clean and sanitize the wall and metal frame today. Increase the frequency these areas are cleaned during the week.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -19C or colder; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 73.5C at the plate's surface as per max/min thermometer. Staff indicate that a new dishwasher will be installed soon.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; labelled; and foods stored 6" off the floor on shelves or racks.
- General sanitation level is good. Staff are continuing to clean the walls behind and around the ice machine, cooking pot, and 2-comp sinks.
- No signs of pests.
- Bleach sanitizer in spray bottles and cloth bucket had [Cl2] of 200ppm.
- Valid, FoodSafe certified staff present. Certificates present.
- The faucet, at the front rinsing out sink, is secure and sealed to the counter top.

ACTION
Clean the wall and stainless steel frame, under & beneath the cooking pot. There is accumulated syrup on the wall and steel frame.
Floor needs a deep cleaning to remove the stains on them. Increase the frequency the deep cleaning is done.
